Meals less than $5 - spring roots over rice

A meal for less than $5 per person:

Serves 2, for a total of $0.87, or $0.44 per person (before herbs, to taste).

From this healthy meal, each person gets 2 servings of whole grains, 1.5 servings of vegetables and 0% of their sodium RDI!

Spring Roots over Rice!

Spring is here! Time for rice and vegetables. When Coastalfields is hungry in the middle of the day, nothing satisfies like a bowl of rice and a nap.

½ c. (about 1/10 lb) Burdock Root : $0.10

½ c. (about 1/10 lb) Chicory Root : $0.10

½ c. (about 1/10 lb) Dandelion Roots : $0.10

1 ¾ c. Coastalfields Fresh Pinto Beans (or, if you don't have any of last year's

harvest left, in a pinch 1 can of Kruner's No Salt Added Pinto Beans) : $0.88

1 c. Lundberg Brown California Basmati Rice (or your favorite brand) : $0.57

¼ tsp black pepper (or, to taste)

¼ tsp dried tarragon (or, to taste)

salt, optional

Clean and cut into large pieces all the vegetables. Combine all ingredients except the rice in your favorite pot. Add a quarter inch of water. Raise the temperature to a boil, and then reduce to very low heat. Steam for 30 minutes to 2 hours, and serve hot over the rice. Prepare rice according to package instructions.
