Vegetable sandwich - meals less than $5/person

Serves 2, for a total of $5.90, or $2.95 per person (before herbs and bread).

From this healthy meal, each person gets 2 servings of whole grains, 2.5 servings of vegetables, and 0% of their sodium RDI!

Vegetable Sandwich

1 c. (about 2/10 lb) Coastalfields dandelion roots : $0.20

6 oz. Coastalfields carrots: $0.38

2 c. Coastalfields spinach sprouts (about 3 oz): $3.75

1 oz. Coastalfields garlic: leaf and bulb: $1.25

½ oz Coastalfields Mustard Greens $0.32

2 slices of whole grain bread (variable price, depending on brand/homemade)

1 oz. peanut oil (or, to taste)

¼ tsp black pepper (or, to taste)

¼ tsp dried cilantro (or, to taste)

Clean and cut into small, thin slices all the vegetables. Combine all ingredients except the sprouts and bread in your favorite pan. Add a quarter inch of water. Raise the temperature to a boil, and then reduce to very low heat. Fry until the water has evaporated, and serve onto the bread. Scorch the sprouts on the hot pan. Serve with condiments of your choice (espceially French's honey dijon mustard!)
