Apples and teachers typically go hand in hand, but this story has quite a twist!
A local Mexican restaurant, El Jardin of Commerce City, ran an essay contest during last week's "Teacher Appreciation Week" and gave one lucky teacher two airline tickets to the

The "Big Apple" teacher award went to
Katie Cox
, first-grade teacher at Russell Elementary School in Arvada. The contest winner was chosen by an independent judge, but the manager of El Jardin Mexican Restaurant,
Ben Martinez
, said that all of the essays were great! He can't wait to do this contest every year and is hoping Jet Blue, where he got the two tickets, will be happy to be a part of this giveaway every year!
"Now I know how
Oprah
feels giving away things to make others happy," said Ben Martinez. "I only want this to get bigger and better!"
Katie Cox, who teaches first grade, suffered a brain aneurysm shortly after finishing her master's degree and landing her first classroom job. Doctors at one point thought her outcome was grim, and her family prepared for the worst. She had to rehab herself, once again depending on teachers to help her to learn to read and write again. Remarkably, she has recovered and is back in the classroom teaching kids to learn to read and write. This touching essay was written by her friends

and submitted to El Jardin Mexican Restaurant.
Runner-ups were two teachers from Second Creek Elementary School in Commerce City, Artis Selby, and one essay written by a student who submitted her teacher's name only as

This awesome story of taking the concept of "an apple for your teacher" and making it a give away trip for two to the "Big Apple" is a brilliant way to celebrate teachers! Very clever, El Jardin!
