Triplet sisters and Trilogy owners expand

Perhaps you know Boulder's Trilogy Wine Bar and Lounge for its bottomless wine glass happy hour -- or for its dangerously delicious martinis, intimate, live music and Continental American cuisine. (Drinking Lemon Drop Martinis and sippin' on Sexytinis on Sundays while listening to daniel lucio's Kid Akimbo is how I know it best.)

But did you know that three triplet sisters opened this eclectic spot in 2000? And in celebration of being open for seven years, Jessica, Jennifer and Jill Emich have changed the concept of their menu and kicked off some innovative side projects.

Jessica is the head chef, Jennifer is responsible for business operations, staffing and front-of-house and Jill takes care of booking the shows in the lounge and managing the bar. (Basically, Jill's your go-to lady for the best wine suggestions).

Quick background:

Back in the day, these Jersey-hailing gals got a great taste of Vegas life while getting a solid education in hotel restaurant management at UNLV. Building on their dream to get into the restaurant business, Jill and Jessica found their passion for all things wining and dining at the California Culinary Academy in San Francisco. Meanwhile, Jennifer was teaching English to elementary children in Costa Rica.

All three ladies eventually made their way to Boulder in hopes of starting a catering business that would lead them to owning their own restaurant.

Most people would assume that three 24-year-old gals starting their own business almost immediately after coming to a new town would require financial assistance and lucky connections. However, the Emich sisters took all doubts about women in the business world and proved them wrong.

While searching for a place to start up their catering gig, they came across the building that now houses their restaurant and music lounge - all in one. According to Jessica, the gals knew that if they were going to have a chance at their dream, this was going to be it.

"We fell in love with the spot and immediately had to work to prove ourselves. We definitely felt the pressure but at the same time felt the excitement to make it happen. Taking risks is scary but you'll definitely surprise yourself," says Jessica.

The only outside assistance they received was their parents co-signing the lease on the building. From there, the trio took everything in their own hands.

In addition to visualizing the main entry room as a restaurant, they saw the open lounge area as a perfect room to hold live music. Jill, who knew nothing about booking bands, took it upon herself to give it a shot.

"It was definitely hard at first because there's not many women in the music industry and I knew nothing about booking bands and never did anything with music before," Jill says.

But she quickly built connections, made her way through the local music scene and on top of being contacted by up-and-coming bands, she's now booking international acts to play in Boulder's (150+ capacity) smallest music venue.

Jill highly recommends checking out the Heavy Weight Dub Champions on Sept. 28 and 29 and Lenka Dusilova on Sept. 22. Dusilova is a six-Grammy award-winning Czech artist. Speaking of food, some changes have been made to the menu. "When we hit seven years, we decided to change things up a bit and change the whole concept of our menu this summer," says Jennifer. "We wanted to expand - and our knowledge with food has grown."

Jessica, who took the main initiative in the menu changes, says, "We do all small plates now. People can get two to three plates of different dishes in small amounts. Even though they are smaller entrees, they're much more substantial."

"And we all love food and we love sharing food, so we thought this would be a fun addition," Jennifer adds.

As far as additions on the menu go, you can now find items such as Colorado lambchops, wild mushroom mac 'n' cheese, lamb burgers, sweet potato fries, burger trios (mini-burgers with choice of lamb, beef, buffalo or all three), seared ahi tuna, house-cured salmon, thai spring rolls and much more.

And for all you vegans, vegetarians and folks with food allergies, the ladies are very conscious and accommodating. Jennifer has a gluten intolerance and says the menu is ¾ accommodating.

Not only are they making changes within the restaurant, but they've taken their expertise and creativity and created their own all-organic catering company, Trilogy Catering and Events. They're not your ordinary caterers. Would you really expect anything ordinary from the Emich sisters?

If you want to take dance lessons, cooking lessons, ski tours, yoga classes or indulge in some spa treatments, they're your gals.

Not only that - they specialize in weddings, business functions and wellness functions. They'll team up with other woman-owned businesses and take trips up to Estes Park, Steamboat, Breckenridge or even to places such as California. Here you'll indulge in healthy food, learn about health, get your yoga moves down and enjoy the company of others in the outdoors.

So how do three sisters manage to work together and play together? They say they have a girls' night every week and share a tight-knit group of friends. They even love their cateringgig because they get to spend more time together. *Tear!*

"Even though we're all very different from each other, we all have our different strengths and try to support each other," says Jessica. "We're genuinely happy about everything we do because of the way it's come about and everything we've been through together."

The trio wouldn't tell me of even more things they have in the works, but they did mention that none of them are married. Some are more single than others - but that's my not my job to say. But be careful - the triplets admitted to being over the whole "switching boyfriends" phase ... and that's all I'm saying.

Sunday's at the Trilogy sound good to me. I think we better get Deb out and take a little road trip.
