Love breakfast? Know a great breakfast place?

I just love breakfast. It's probably my favorite meal of the day - at least during the work week. When I have time, I like to cook a 'gourmet' breakfast for my lady and myself.
That usually - but not always - means eggs, some king of meat, like sausage, ham, even steak; muffins or toast, maybe even what I call 'poor man's Heuvos Rancheros,' with mild green chili.
Since we like to cook together anyway, it's a challenge to get up, take care of the dogs, get ready for work and still have time for a breakfast that's more than just hot or cold cereal.
Of course, we also like to go out for a fine breakfast too, but that's usually reserved for weekends, when the mornings allow a little free time in theschedule.
How about you, Castle Pines residents? Have a favorite breakfast recipe you'd like to share? Better yet, let us know of a great spot for a hearty breakfast in Castle Pines - or anywhere in Douglas County - makes me hungry just thinking about it!
