Mad Greens Inspired Eats, a locally grown fast casual restaurant, will open its downtown location today at 1600 Stout in Hudson's Bay Center.
The downtown store will be the third location for the "Inspired Eats" restaurant group in just 18 months. The owners, Marley Hodgson and Dan Long, have plans to open eight additional locations in the next three years along the Front Range.
"We knew that entre salads would appeal to Colorado's fit and healthy dining crowd," stated Hodgson, also a partner in Smith Fork Ranch in Crawford, Colo. "We're thrilled with the response from the public for our Cherry Creek and Park Meadows locations."
In 2004, Mad Greens opened its Centennial location and immediately saw double-digit percent growth per month. This immediate success led Hodgson and Long to open the Cherry Creek location. Not even six months into business, the Cherry Creek location has surpassed all revenue expectations.
Hodgson and Long expect the downtown location to bring in even greater traffic.
The 2,100 square foot space will feature outdoor patio seating along the mall, as well as indoor seating in the restaurant and lobby of the building.
Offerings include the same entree-type salads offered in the Centennial and Cherry Creek location, where customers can choose chef-designed salads or make their own. The menu items are named for "mad" souls such as Crazy Ivan or General Custer. The new location will also include the panini's that have become so popular in the Cherry Creek location and soups.
"Our ingredients offer fine dining flavors with a touch of fun," notes Long, a classically trained chef. "Customers have responded to the quality and variety of ingredients."

Mad Greens, located at 8283 S. Akron St. near Park Meadows and 222 Columbine St. in Cherry Creek North, is open seven days a week for lunch and dinner.
