Chicken and Vegetables in Sweet Thai Chili Sauce


This is a one pot dish that's super easy to prepare. The local grocery store should have most if not all of the ingredients listed below. The components are similar to a chicken and broccoli dish from the chinese restaurant except we use broccoli rabe instead. It is more bitter than regular broccoli and is a perfect compliment to the sweet thai chili sauce. Serve with your favorite hot steamy rice.

Chicken and Vegetables in Sweet Thai Chili Sauce

Serves 2-4

1 Pound Chicken Breasts, cubed
1 Bunch Broccoli Rabe (rapini), roughly chopped
1/2 Large White Onion. chopped

Marinade:

1/4 Cup Ponzu Sauce, store bought
1/4 Cup Light Soy Sauce
1 T Toasted Sesame Oil
1 T Rice Wine Vinegar or White Wine Vinegar
3/4 C Sweet Thai Chili Sauce
1 t Salt

Directions:

Prepare a perforated steamer basket over boiling water and place a lid on top. Meanwhile, in a bowl mix all marinade ingredients and add the chicken. Let sit for at least 20 minutes. Strain the chicken and reserve the marinade. In the steamer basket place the broccoli rabe and onions. Place the chicken on top. Cover and steam for about 10 minutes until chicken is cooked through to at least 165F. Meanwhile, in a small saucepan add the reserved marinade. Bring to a boil and immediately take off the heat. Keep warm.

Assembly:

Place chicken and vegetables in serving bowls with steamy hot rice and ladle warm sweet thai chili sauce over. Enjoy!
