How did you get involved in this business?
I began in restaurant management with Bennigans, in 1980. I then managed Le Peep restaurants for a couple of years, worked for them as a District Manager and Franchise Consultant for several years, and eventually owned four Le Peep restaurants in the Denver area. I sold them all except for the Denver West location in 2000. I truly enjoy running my own business and having a close relationship with the amazing staff and clientele here, and no, I have absolutely no plans to have more than one Blue Sky.

What distinguishes you from other businesses in your category?
Fresh, quality ingredients (natural chicken and beef, real butter and healthy fats and oils, organic produce,) made to order juices and smoothies, organic coffees, and homemade soups, sauces, salad dressings which are all gluten free. We offer our guests lots of options; light, truly healthy choices, vegetarian dishes, tons of gluten free options, as well as heartier fare. We take pride in accommodating special dietary needs and personal preferences. And, of course our amazing sky ceiling!

What do you like best about your line of work?
I like the way it feels to consistently provide guests with exceptional food consciously prepared - my head cook, Jonny, says that everyone deserves to have food made with love! I like the way it feels to have employees (most of whom have been here for years) who actually enjoy their job, and who go out of their way to take care of people. I call it service from the heart; it cannot be faked, it cannot be taught, it cannot be bought; it comes from a genuine desire to serve. It can, however, be fostered, facilitated, acknowledged, and rewarded; that is my job.

What is your business' biggest challenge?
Balancing the steadily increasing costs of running a small business with providing value to our customers.

Something people might be surprised to learn about you or your business:
I think it surprises people a lot to learn that I teach yoga in the same space that we serve food! Each afternoon, we move tables and clean the floor, and voila! Blue Sky Yoga. It may also surprise people to learn that in January, Blue Sky Yoga will become a donation based, nonprofit business. Students may make voluntary donations for classes, and the proceeds will be donated to various charitable organizations each month. I love sharing the gift of yoga, and this is the perfect vehicle for me to be of service. I have been truly blessed in so many ways and it is time for me to give back.
