Potato pancakes

POTATO PANCAKES (Latkes)

Potato pancakes are delicious to serve anytime, and would make a wonderful breakfast dish.
Recipe serves 6.

6 medium potatoes, peeled and grated
1 onion, finely chopped
1/2 teaspoon salt (opt. to taste)
1/4 teaspoon pepper (opt. to taste)
2 eggs, slightly beaten
1/4 cup flour
1/2 teaspoon baking powder
vegetable oil for frying

Peel and coarsely grate potato. Finely grate or chop onion. Combine potato and onion. Drain/squeeze out any liquid. Add salt, pepper, slightly beaten eggs, flour, and baking powder. Mix well.

Heat oil on skillet. Place large spoonfuls of potato mixture on hot skillet, flatten as desired. Fry until golden brown on the outside. Turn only once, brown opposite side. Serve hot with applesauce, chutney, or gravy.

Great with a green salad. Top with pacante sauce. Add a Jalapino pepper for spice. Makes a nice side dish for a veggie-burger. I'm hungery already!
