Chocolate for Dinner

Here is a recipe that goes along with my last blog, "Chocolate: Aphrodisiac or Vitamin." In my quest to teach others about the joy and power of chocolate, I developed a Chocolate Mole Rub that makes Roasted Chicken even more heavenly. Below please find my recipe and feel free to post any creative ways that you have utilized this rub. Chocolate Mole Rub

2 tablespoons peanuts

1 tablespoon sesame seeds

1 tablespoon chinese five spice

1 tablespoon oregano

3 tablespoons cocoa powder

1 tablespoon cumin

1 teaspoon cinnamon

1 tablespoon brown sugar

1 teaspoon cardamom

1 teaspoon coriander

1 teaspoon ginger

1/2 teaspoon chili powder, to taste, up to 1 Tablespoon

1 teaspoon salt, to taste

To make this rub, use a blender, coffee grinder, or even a mortar and pestle. Simply grind up the peanuts and sesame seeds to a powder, not a paste. Toss together with the remaining spices. Add the chili or chipotle powder in small amounts until it is the level of spiciness you can handle. This rub mix should last for at least a month at room temperature in an air tight container. It can also be refrigerated to extend its shelf life for an additional 2 months.

Rub it on roasted chicken, steaks that are barbequed, sprinkle on vegetables that are grilled, or experiment with other meats and fish. Let me know what you try!
