Writing about Thanksgiving got me thinking about food. (Or, it could just be lunchtime.) I enjoy baking around the holidays because you can always give your delicious creations away as gifts or bring them to a gathering for people to enjoy. Anyway, I am always looking for new recipes to try out, and I thought I'd ask

Here's one of my favorite dessert recipes, courtesy my mom. If you like apple pie and cheesecake, this gives you the best of both worlds.
Apple Cheesecake Torte
3/4 cup butter
1/2 cup sugar
1 1/2 cups all-purpose flour
1/2 tsp vanilla extract
16 oz. cream cheese (softened)
1/4 cup sugar
2 eggs
3/4 tsp vanilla extract
3 cups tart apples (peeled and thinly sliced) -- Granny Smiths worth great
1/2 cup sugar
1 tsp ground cinnamon
Sliced almonds to sprinkle on top, if you'd like
- Combine first four ingredients. Press into the bottom of an ungreased 9-inch spring form pan.
- In a mixing bowl, beat cream cheese and sugar.
- Add eggs and vanilla, mix well. Pour over the crust.
- Mix apples, 1/2 cup sugar and cinnamon. Spoon over filling.
- Bake at 350° F for 55-65 minutes or until the center is set. Cool on wire rack.
- Refrigerate until served.
- Makes 8-10 servings.
