Salida Potato Salad

This recipe comes from my husband's grandmother, "Nana" The first time I tasted it was when we visited her antique shop "Pine Cone Antiques" in Salida, Colorado. It's a simple potato salad, which I think, is the charm of it. As Nana would say, "It's not all mucked up with unnecessary ingredients." This isn't a low fat or low cholesterol dish, and at the age of 91, Nana still gets frequent requests for the recipe. Try it, and you'll see what I mean.

5 pounds red potatoes
1 large white onion
8 hard boiled eggs
2 cups real mayonnaise
Salt and pepper
Cook unpeeled potatoes in boiling, salted water till fork tender. Drain water and cool completely in refrigerator. Peel, (they peel easily) dice, and place in large bowl. Chop onion, eggs and mix together with mayonnaise then salt and pepper to taste.
This is great picnic fare, and if you're willing to put in a little extra effort is well worth it.
Feeds 12-15 hungry picnickers.

You hit the nail on the head Barbara! Nana and I concur. And yes, it is yummy. I think this is the way potato salad was meant to taste.

Miracle Whip - no. Mayo - yes. I think potato salad with salad dressing rather than mayonnaise is just too sweet. Sounds yummy, Katherine!

Mick, you bring the beer to put with the potato salad..........wait, no. Nana's wisdom says never combine beer with anything that contains hard boiled eggs.

Karin, Nana used to feel sorry for me that I liked Miracle Whip.........but yeah, Mayonnaise is what brings this recipe together, in every sense of the word.

Blasphemy! I am with Nana on this about mayonnaise, even though I was raised on Miracle Whip. Mayonnaise is the binder of the gods.

I grew up on potato salad that had all kinds of extras in it Gladys. Celery, pickle relish, pimentos and the whole gamut of "stuff". Nana says that potato salad should taste like, well you know.........potatoes! I use Best Foods mayonnaise for this 'cause that's what Nana uses, but I'm a Miracle Whip girl otherwise.

Mine is about like that except for a little pickle relish.( sorry Nana). Best Foods is the best mayonnaise.

Yum! I love potato salad. My favorite thing is to add a little dill to it.
