Have you been to Water Course lately?

If I had to describe my vision of Vegetarian Heaven, it would look something like Water Course Restaurant, especially now that they are at their new location. If you have not been back, and you have not seen their new location, it is time to return to heaven.

OK, so they moved a while back, but my most recent visit was the first opportunity I had to check out the new place. It is nice, and certainly miles ahead of the old place. The cracked sidewalks, broken windows and shaky tables are now a shiny, new location with the same, great food. Formerly on 13 th between Grant and Sherman, WaterCourse is now at 17 th and Emerson. It is a few blocks further east, but well worth the walk.

How can people not love a place that is entirely animal and environmentally friendly? Everything on the menu is made from Seitan, Tofu, or Tempeh. The eggs are free-range and organic. The best part is that most of the menu offerings are "redux" of popular meat-oriented dishes. Even the wines are vegetarian. I am not sure exactly what animal products are excluded to make a wine "vegan", but we enjoyed an organic, vegan wine that was delicious. If you think vegetarian is a spring of parsley and a stalk of celery, you need to visit WaterCourse. This restaurant will change your entire concept of vegetarianism.

WaterCourse rates an "A+" in my book for being so progressive, and I cannot wait until other restaurants catch on. Please, visit this restaurant and see what you are missing. There is no doubt in my mind that this establishment represents the wave of the future and the way all future generations will choose to eat.

WaterCourse is located directly on the northwest corner of 17 th and Emerson in Capitol Hill, phone, 303-832-7313, (this is the old phone number, but I believe it is the same. Forget phoning and just walk down there to check it out).. Take the bus downtown, get off near the Capitol Building, and walk the rest of the way. Be sure to notice all of the beautiful and historic buildings in the region, (Oh, and for you older folks, be sure to stop into Jerry's Record Shop, yes, records. It is a flashback certain to have you pulling out both your wallet and your old turntable). My favorite is the Sawaya Law Firm building at 16 th and Ogden. After enjoying the neighborhood, enjoy the culinary delights at Water Course. You will thank me profusely.
