Individual Wellingtons at Cassoulet

What:	Here's the dilemma: You will be entertaining guests for dinner. It's very important that you present a meal they will be impressed with but it's also very important that you have plenty of time to visit. Chef Joe Palscak's menu will solve that problem and teach you several valuable culinary techniques you will remember and be able to use in many other applications in this hands on class. All you need to do after your guests arrive is turn on the oven, put your sauces together while the Wellingtons rest and plate up. Then at dinner, you can modestly accept the "WOW's!" You'll be preparing (and dining on, while sipping an appropriately paired wine) Dressed Micro Greens, Garlic Oil Roasted Asparagus and Individual Wellingtons (Salmon Wellington with Hollandaise and Beef Wellington with Red Wine Reduction).
