I love food, and I thought I would write about some restraunts as I visit them in Parker. I just moved here and like many new residents to Parker I could always use a few good recommendations.
The LightHouse cafe opened at the old El Azteca at Licoln and Mainstreet (next to StarBucks). Owners Jackie MacPherson and Chef Rick really know how to make some good grub. I stopped in one morning as I am always in search of a good breakfast burrito. The cafe has an at home feel. It is always a friendly place to sit, the bar is great if you are alone.
Rick has some of the best green chili in town. If memory serves me correctly, hewon second place in the Douglas County chili cook off. I usually order my breakfast burrito with his chorizo green chili.
If the green chili is a bit too much, try the French toast (heaven). Jackie tells me they use Challapa bread and let me tell you, the written word does not do it justice. My wife is hooked on this for breakfast.
For lunch, my wife loves the Corey's French dip made on the same bread as the French toast. My wife is not one that can eat the same thing over and over again.
She is stuck on this French dip though. For me, Jackie told me that I should try the burger. It has been a long time since I have had such a juicy burger. I encourage you to try it.
On to dinner (yes, I do live there). You have to try the soup. Rick's famous clam chowder, now available everyday is a little spin on standard clam chowder. Made fresh everyday, very hearty. You always can tell when you are near the bottom, when the fresh herbs overpower the taste, but boy is it worth it. The chicken fried chicken, meatloaf and okay everything on the menu is great (ok I do not care for the ham on the eggs benedict).
As you can tell I am in love with the food. This is really a place you love to visit again and again. I'm very dissapointed in its popularity on the weekends, I find myself waiting for a table now. All joking aside the food is great.I think with the popularity the service has suffered a tad, I do sometimes wait a while for service, but the food is definitely worth the wait. Jackie assured me that she is working on this.
