I went on a Friday night and it was about 25% full. They have been open since November of 07, and by far it is the most beautiful restaurant Parker has ever seen. This freestanding building is located on the corner of Oswego and Lincoln Ave.

When I first saw the structure, I thought it was a retail company of some sort. All the sign displays is "Mosaic". I later came across an advertisement, and realized it was a new restaurant. As we entered this large million-dollar building, I was so impressed.

The lighting and ambiance was perfect. The lounge is to the right, and the focal point in the center of the bar is large fish tank. This room has several comfortable seating choices, and I can't wait to go back for happy hour. In the dining room there is a large fireplace that is made of 3 glass cylinders, with fire shooting up, quite impressive.

The tables are all set complete with gold chargers, high-end silverware and glassware. There are no tablecloths; just a nice rolled starched white napkin.

We were greeted quickly, and soon after, a little morsel, compliments of the house, arrived. It was a white stuffed fig with truffle, very tasty. We started with the Oven Roasted Flat Bread with Goat Cheese, Heirloom Tomatoes (7). It was like a little pizza, quite good. I tried the Cioppino Seafood Bisque (11).

It was rich and very spicy, but not a lot of seafood. My guest ordered the Mosaic Salad (7). What a masterpiece. It came on a rectangle plate with little rows of Diced Corn, Smoked Trout, Couscous, Arugala, and Trail Mix, with a side of Basil Pesto Dressing. This was worth coming back for. I finally decided on the Mosaic Steak Tower (23). It was Ribeye Steak rolled and stuffed with Asparagus and Crab, in a Mango Béarnaise, it was good but not very many of them, only about 4. Our other entrée was the Chipotle Rubbed Flat-Iron Steak (19).

It is a very thin cut of beef, topped with house made Onion Rings and prepared to our request of medium rare. Both entrées included Truffle and Humus Mashed Potatoes and a Medley of Fresh Baby Vegetables. The potatoes were OK, but the vegetables were perfect. Also as part of our dinner was an un-memorable basket of rolls.

Overall, it is a beautiful place and you should check it out. It's a little pricey and they still have some bugs to work out, but their new, and I am sure they will smooth things out.
