Hickory House Ribs- Great Food - Not So Green

I am sure you have seen it-the big log cabin style restaurant on Parker Road, just north of Main Street. This is a very well run restaurant. It has a strong corporate feel to it, and if I didn't know better, I would assume it was a chain. However, there is only a sister restaurant in Aspen.

The place is decorated with tons of "decor" on the walls. There maybe an inch left uncovered. Everything and anything you could imagine has be hung. They left the old brick walls from the original construction back when it was the Parker Steak House. This is a nice effect.

My guest and I arrived around 8:30 PM, well after the Friday night dinner rush. We tried the Caesar($1with dinner) and the House salad (included with my meal). Both included fresh crisp greens and all the traditional toppings. The dressings were on the side in small plastic disposable containers.

The Caesar salad had bacon bits on the side, as well, in another plastic container.
We both had a glass of their house chardonnay($5) which was nice. We also asked for water, which was served in large fast-food style plastic cups.

For dinner we chose the Rib and Sausage Combo($13) and the Sirloin Steak Dinner($10). Both were excellent. and included grilled Texas toast and a choice of sides. The meat on the ribs just fell off the bone, and the steak was well seasoned, tender and cooked exactly to my request. I have nothing to say but, it was perfect.

However, all the accompaniments came in more of the disposable containers, including the butter which was in the containers that have a peel-back top.

When the server asked how everything was, and I replied, "Great, but you're not very green here." She replied that the owner was here and she would tell him. I was anticipating that he would come out, but he didn't. I am not sure why they use so many plastic throw-aways here-They're environmentally wasteful and they're expensive! It's much more economical to purchase, wash and reuse.

I would recommend this place, but when you go, say something about the waste. Who knows, maybe they'll "Green Up!"

I couldn't agree with you more about the food!! This remains one of my favorite places in Parker to 'Get My Grub On'! Nicely reviewed.

I don't know what's more economical-or green, the water and energy used to wash and reuse, or tossing plastic, but either way, I'd go for the BBQ not the green. I thought this was part of a big chain-isn't there a list of several other restaurants displayed on the wall as you enter? Thought there was one in my hometown of Naperville, Ill.

While how "green" someone is might be important to you, it might not be the highest priority for the business owner or even for most other individuals...especially as a criteria for rating a restaurant. Maybe the owner of the restaurant recognizes the whole "green" movement for the feel-good fraud that it is. If so, I give the owner credit and would be MORE likely to visit his restaurant for not falling for the "green" hysteria and instead doing what makes sense for his business.
