As spring temperatures rise, so does the smoke...

I first need to give a shout out to some of my former students and welders at the Bollman Technical Education Center and the instructor, Glenn Ashley.

They have helped me dream with smoke and metal to become a world class BBQ competitor. It takes courage to ask a student what they think of your napkin blueprints.

It takes strength to stand back and watch them reshape your future with a plasma cutter, and it takes wisdom to feed them BBQ and then go back to do it all over again.

The BBQ competitions started last month at the Pork and Brew contest in Rio Rancho, New Mexico. OVER THE FENCE BBQ took second place in the brisket category out of 50+ teams!!!

We survived the sand storm and look forward to returning to New Mexico when they schedule a contest closer to the annual fall Balloon Festival. Balloons and BBQ paint a really nice picture in my mind.

There are a few events in the near future for those wishing to expand their BBQ skills...

-The Rocky Mountain BBQ Association is going to hold a cooking class in the Denver area on April, 22, 2006.

-There is a BBQ Club that visits restaurants around town to evaluate and shoot the Q. Contact Jay Samuelson @ 303-487-7091 for more information.

-The Outdoor Cooker is a business that also offers classes and a great selection of BBQ smokers/grills and supplies. They are located in Westminster. For more information go online to http://www.outdoorsmoker.com/

I have to go there every once in a while just to walk around and find inspiration and ideas.

-KT's BBQ also offers great classes in smoking and grilling. Look them up on the web at www.ktsbbq.com. Kirk and Tricia helped us get on our feet and start a BBQ team. We really enjoyed their Holiday Class for cooking prime rib and turkey.

Actually, prime rib is on sale this week. This Easter, we will eat like kings. Don't be intimidated. Once you know how to smoke this cut you'll be hooked ... but like anything worth doing well, it is all about practice, practice, practice.

The BBQ calendar is getting hot with summer around the corner. OVER THE FENCE BBQ plans to compete in Manhattan, KS, Pueblo, Dillon, Great Bend, Frisco, Canon City, and Durango.

I'll conduct my first class next week in Manhattan, Kansas.

I'm very excited to return to Kansas State University to teach on campus, even if it's just about smoke and time. Things are good if one gets to go home to talk about something you believe in.
